Detoxifying Herbal Cucumber Salad That Nourishes the Digestive Tract, Makes Your Skin Glow & Tastes Amazing!
Low Glycemic Index, Anti-Inflammatory, Hydrating, Glowing Skin
If you’re looking for a tasty way to heal the gut, make your skin glow, banished bloating and overall just makes you feel like a million bucks, you need this recipe! And the best part is it’s so dang inexpensive (especially, if you grow your own herbs like I do!)
I eat this salad 2-3 times a week (or more) during the hotter months and I never get sick of it because it’s THAT good.
A key secret is to make it fresh.
I don’t love the salad as much the next day, but it shouldn’t be a problem. You’ll likely eat the whole salad in an extra large bowl all to yourself with no leftovers in sight!
So let’s get to the recipe so you can see for yourself.
(I tend to get 2-3 extra long large European/English cucumbers or a few packages of Persian cucumbers and slice them up super thin.)
Here are the ingredients you’ll need:
2-3 Large Cucumbers
1 Shallot or 1/2 Medium Red Onion
1/4 cup Fresh Dill
1/4 cup Fresh Parsley
1/4 Cup Fresh Mint
1-2 tablespoons Extra Virgin Olive Oil
1-2 tablespoons Rice Vinegar
1 Lemon (juice)
1 teaspoon Sea Salt
Directions:
Just thinly slice up the cucumbers and shallots (or red onion), finely chop the fresh herbs, drizzle the rice vinegar, olive oil, and lemon, and sprinkle some sea salt and WA-LA stir it up and gobble it down!
Now let’s check out the health benefits of this super simple and tasty salad:
The primary health benefit of this salad is support for digestive health.
Each of these ingredients offers specific properties that contribute to a healthy digestive system:

Vitamin C: An antioxidant that boosts the immune system and promotes healthy skin.
Potassium: Helps regulate blood pressure and supports heart health.
Magnesium: Involved in over 300 biochemical reactions in the body, including muscle and nerve function.
Flavonoids and Tannins: Cucumbers contain antioxidants like flavonoids and tannins that help combat oxidative stress and reduce inflammation in the body. This can lower the risk of chronic diseases such as heart disease, diabetes, and cancer.
Weight Management: Cucumbers are low in calories, making them an ideal snack for those looking to manage or lose weight.
High in Fiber: The fiber content in cucumbers promotes digestive health by adding bulk to the stool, aiding in regular bowel movements, and preventing constipation.
Anti-Inflammatory Properties: Cucumbers can help reduce skin inflammation and irritation. They are often used topically to soothe sunburn and reduce puffiness around the eyes.
Silica Content: Silica is beneficial for skin health, contributing to the strength and health of connective tissue.
Potassium and Magnesium: These minerals help regulate blood pressure and maintain a healthy heart rhythm.
Lignans: Cucumbers contain lignans, which helps to reduce the risk of cardiovascular disease.
Natural Diuretic: Cucumbers help the body eliminate waste and toxins through increased urination, which can help prevent kidney stones and maintain overall kidney health.
Low Glycemic Index: Cucumbers have a low glycemic index, which helps in managing blood sugar levels. They can be a good addition to the diet of people with diabetes.
Freshens Breath: The phytochemicals in cucumbers can help kill bacteria in the mouth that cause bad breath.
Pain Relief & Anti-Inflammatory Properties: Cucumbers have compounds that can help reduce inflammation and pain, which can be beneficial for conditions like arthritis.
Shallots:
Prebiotic Fiber: Shallots contain inulin, a type of prebiotic fiber that promotes the growth of healthy gut bacteria, which aids in digestion and improves gut health.
Digestive Enzyme Production: The sulfur compounds in shallots can stimulate the production of digestive enzymes, aiding in the breakdown and absorption of food.
Quercetin and Allicin: Shallots are rich in antioxidants like quercetin and allicin, which have anti-inflammatory properties that can soothe the digestive tract and reduce inflammation.
Dill:
Carminative Properties: Dill helps alleviate bloating, gas, and indigestion by promoting the release of digestive juices and bile.
Parsley:
Digestive Aid: Parsley helps reduce bloating and acts as a mild diuretic, which can help the body eliminate excess fluids and toxins, promoting better digestion.
Mint:
Soothes the Stomach: Mint is known for its ability to soothe the stomach and reduce symptoms of indigestion, gas, and bloating. It also helps in relaxing the digestive tract muscles.
Olive Oil:
Stimulates Digestion: Olive oil stimulates the production of digestive enzymes and bile, aiding in the digestion and absorption of nutrients. It also has anti-inflammatory properties that can soothe the digestive tract. Just don’t get the cheap shit. Find a local Italian market and get the real deal! It matters!
Lemon:
Digestive Enzyme Stimulation: The acidity of lemon juice stimulates the production of digestive enzymes and bile, which helps in breaking down food and improving nutrient absorption. Lemon also has a mild detoxifying effect, helping to cleanse the digestive system.
Sea Salt
Stimulation of Digestive Juices: Natural sea salt can stimulate the production of hydrochloric acid in the stomach, which is essential for the digestion of food and absorption of nutrients.
Electrolyte Balance: Sea salt provides essential minerals such as magnesium, calcium, potassium, and sodium, which help maintain the body's electrolyte balance and support overall digestive function.
Flushing Out Toxins: Sea salt can help the body to detoxify by promoting the elimination of toxins and waste products through improved kidney function and enhanced hydration.
